PEA AND FETA DIP
A chunky, super delicious and easy dip that's excellent served as pictured here with crackers and pickles, or served next to grilled fish or grilled chicken. I love this recipe, it takes barely any time to make, uses ingredients you've probably already got on hand and is so tasty.
Makes: about 1 ¼ cups | Prep Time: 10 minutes

Ingredients
● 1 cup (150g) frozen peas or 160g fresh peas
● A handful of fresh mint leaves
● ½ tsp sea salt
● Zest and juice of 1 lemon
● 2 tbsp Greek-style yoghurt
● 100g feta, crumbled
● 2 tbsp olive oil, plus extra for drizzling
● ½ cup walnuts, toasted and roughly chopped
Method
Blanch the peas in boiling water for a few minutes, then drain and refresh under cold water. Transfer to the bowl of a food processor and add the mint, salt, lemon zest and juice, yoghurt, feta and olive oil. Blitz until you have a rough consistency, season to taste and plate up in a nice, shallow bowl. Sprinkle with the walnuts and drizzle with extra olive oil.
Notes: If you're making this ahead, try to bring back to room temperature before serving. It's much nicer that way!
